maple raisin apple oatmeal muffins (aka breakfast muffins)
I've been mia lately because, as you may have guessed from my last post, we have a newborn! :) She keeps us quite busy, but I stole a few moments to come back to my little corner of the web to write this post because I thought it might be useful to other new parents out there.
These breakfast muffins I think will come in handy for parents of newborns because when you have a baby to tend to you just need to grab something to nourish yourself quickly. These muffins have got it all, they kind of remind me of having oatmeal, but they're in muffin form so they're much easier to grab and go, and they're super easy to make to boot.

Maple Raisin Apple Oatmeal Muffins
adapted from Dairy Goodness
1 1/4 cups (310 mL) quick-cooking rolled oats
1 1/2 cups (375 mL) Milk
2 cups (500 mL) all-purpose flour
1 tbsp (15 mL) baking powder
1/2 tsp (2 mL) salt
1/3 cup (80 mL) sugar
1/4 cup maple syrup
1/4 cup (60 mL) butter, melted
1 tsp (5 mL) vanilla extract
2 cups (500 mL) apples, unpeeled, grated
1/4 cup raisins
Preheat oven to 400 °F (200 °C). Lightly butter nonstick muffin pans or line with paper liners.
In bowl, combine oats and milk; let stand for 5 min. In separate large bowl, combine flour, baking powder and salt. Whisk sugar, maple syrup, egg, butter and vanilla extract into milk mixture. Pour over dry ingredients and add grated apples and raisins. Stir just until moistened.
Spoon into prepared muffin pan. Bake for about 35 min or until tops are firm to the touch. Let cool in pan for 10 min.
