berry goat cheese salad


During the summer, it's nice to eat lots of salads because the fruits and veggies are locally in season, and because salads don't require any heat to prepare! :)

So I decided to share this quick salad idea.

The goat cheese and the dressing pair together well, and the berries add a nice burst of juiciness in every bite.

summer cold


I'm sorry I haven't posted in a while.  I'm down with a summer cold.  I think this is the first time I've gotten a cold in the summer.  It's infinitely worse to have a cold in the summer, not to mention, strange.

But Mr. A is making me lots of camomile tea with honey though and I'm popping Cold FX like it's candy, so I'm hoping I can get over this quickly.

herb garden tour


We were quite late in planting our garden this year.  Every time we wanted to plant, something came up or it was raining or what not.  So we only got around to planting our garden in mid June.

Because it was a little late in the season we decided to plant herbs instead.  We went to the nursery to pick up some herb plants, and while we were there we decided to only pick perennial herbs so we wouldn't have to replant next year (fingers crossed!) (and yes, we were kind of being lazy).

Here's what we planted:
  • sage
  • more lavender
  • peppermint
  • rosemary
  • thyme
We are had these herbs, which are also perennials:
  • tarragon
  • chives
  • spearmint
  • lavender

s'more smores!

We recently went on a family camping trip for Mr. A's birthday.  It was so much fun!

Mr. A's mom bought these extra large marshmallows which were basically the size of 4 or 5 regular marshmallows.  They were actually the perfect size for making a smore sandwich pictured here:


Here's the recipe (ie. instructions):

Campfire Smores

Ingredients:
1 marshmallow
2 graham crackers
1-2 pieces of chocolate

Take a marshmallow and roast it to perfection as picture here:

that's a roarin' fire!

Then stack your ingredients as follows:
graham cracker, chocolate, piping hot roasted marshmallow, graham cracker

The marshmallow will melt the chocolate and less than a minute, and then you're ready to enjoy!

flourless peanut butter cookies


I don't know about you but in the summer I'm kind of less inclined to spend lots of time baking.  I'd rather be outdoors, and not next to a hot oven.  So, this recipe is perfect for me in the summer.  I still want to bake, but I want recipes that are super fast and easy so I can go out and enjoy the sun.  Another bonus with this recipe is that these cookies are flourless ie. gluten-free and paleo!  So Mr. A can have them too, guilt-free. :)




Here's the recipe!

Flourless Peanut Butter Cookies
from Real Simple

makes 36 cookies

Ingredients:
2 cups creamy peanut butter
1 cup packed light brown sugar
1 cup granulated sugar
2 large eggs
2 teaspoons baking soda
1/2 teaspoon salt

1. Heat oven to 350F.  Line 2 baking sheets with parchment paper.  In a large bowl, mix together all the ingredients until smooth.

2. Shape the dough into balls (about 1 heaping tablespoon each) and place 2 inches apart on the baking sheets.

3. Bake, rotating the baking sheets halfway though, until puffed and golden, 10-12 minutes (the cookies will deflate as they cool down).  Let cool slightly on the baking sheets, then transfer to a wire rack to cool completely.
