flourless peanut butter cookies
I don't know about you but in the summer I'm kind of less inclined to spend lots of time baking. I'd rather be outdoors, and not next to a hot oven. So, this recipe is perfect for me in the summer. I still want to bake, but I want recipes that are super fast and easy so I can go out and enjoy the sun. Another bonus with this recipe is that these cookies are flourless ie. gluten-free and paleo! So Mr. A can have them too, guilt-free. :)

Flourless Peanut Butter Cookies
from Real Simple
makes 36 cookies
Ingredients:
2 cups creamy peanut butter
1 cup packed light brown sugar
1 cup granulated sugar
2 large eggs
2 teaspoons baking soda
1/2 teaspoon salt
1. Heat oven to 350F. Line 2 baking sheets with parchment paper. In a large bowl, mix together all the ingredients until smooth.
2. Shape the dough into balls (about 1 heaping tablespoon each) and place 2 inches apart on the baking sheets.
3. Bake, rotating the baking sheets halfway though, until puffed and golden, 10-12 minutes (the cookies will deflate as they cool down). Let cool slightly on the baking sheets, then transfer to a wire rack to cool completely.

I am trying them this afternoon with the girls. It's hard to find good gluten-free recipes. This one looks amazing! Thanks for sharing!
